Ochobo Kyoto Style Ramen Noodles

You will gather from the shear number of ramen noodle restaurants in Japan that the Japanese love their noodles! And Saga is no exception. There are an array of different varieties of ramen but Kyushu is most famous for its rather heavy; yet tasty, pork-based ‘tonkotsu’ soup ramen. This style of ramen, with its white cloudy appearance and oily consistency is by far, the most popular type in Saga.

However, if you are looking for something a little lighter, look no further that Ochobo, Kyoto-style ramen.  Ochobo is located in central Saga, not far from the prefectural government offices.

In contrast to the heavy meaty broth of the tonkotsu ramen, the ramen served in Ochobo uses a light soy sauce-based soup. This clear, brown soup is very different in appearance and taste.

Toppings are also slightly different from those traditionally served with Kyushu-style ramen, such as white radish sprouts and corn.

While Ochobo’s ramen broth is very light, authentic Kyoto ramen is, in fact, much heavier and thicker. This dish has been created in the image of Kyoto! An image of simple elegance! Try it and see if you agree.
