It is probably because of the owner’s strong emphasis on the quality of their products. Let me talk about their miso here. What is unique about the Neda company’s miso is that the ratio of rice and soy beans is almost the same. The owner explained that the balance of rice to soy beans affects the taste the most. The high proportion of rice gives the miso a sweeter taste and adds to its flavor. The more rice you add, the more it costs, so many miso companies tend to use more soy beans than rice. No wonder this miso has such a mild taste and the smell is also not too strong. Soya beans However, this does not mean other companies’ products are bad. Each miso has different merits, and which miso people choose, depends on what they cook or what their preference is on the occasion. That is normal. The miso I recommend is Neda’s “Inaka Miso.” It is a bit more expensive than miso you see at the supermarket, but its well-balanced taste is superior. Their soy sauce, “Ninen Moromi” is suitable for any use.
